I have been watching free videos for almost a year and I can manage basic stitching now. My problem is that every person teaches differently and I have ended up with lots of saved videos but no proper learning path. I am wondering if paying for a course will actually make a difference.

The problem is exactly what you've described: a folder full of videos with no order to follow them in. Each teacher shows their own method for their own project, and none of them are building toward a plan for you specifically. A good paid course isn't paying for 'better information' than what's free — it's paying for a sequence, and for someone to ask when a step doesn't work the way a video showed it. So before you decide, ask any course what path it actually gives you from where you are now, and how you get help when you're stuck. That's the real value, not the price tag.
